I am not as familiar with this cut when it comes to cooking it and cooking it well so I get nervous. I try to always remember, lower temperatures and slower timeframes when it comes to grass fed, grass finished beef. This helps ensure that it comes out tender and flavorful. I have purchased in the past and did cook it well enough that I purchased it again. Great tasting meat.
