Bray Cured was founded in 2021 by Alex, a one-time chef and medieval historian, who left the office and returned to the kitchen to focus on his passion, making charcuterie.

We had so much fun on our sausage…

We had so much fun on our sausage making course. Alex was entertaining to listen to and very informative. David was great at teaching us how to make the sausages and answering questions. We felt really spoilt when we left, a fantastic spread with wine that we weren’t expecting! Definitely recommend

How many countries……..

The three monthly deliveries that I have had were a farewell gift from my son-in-law when his family, (my daughter and 2 granddaughters) emigrated to Australia

Your meat parcels have been excellent!
The variety and scope of countries that you draw from is a beautiful combination of herbs, meat and ingenuity and I have enjoyed every single slice from a diverse number of countries.

Thank you for such small luxuries, I will be ordering off my own bat soon.

Expert skills taught brilliantly

I went to bray cured on a duck curing course. It was a fantastic experience, with Alex and Dave taking great care of us, sharing their extensive knowledge in an easy going and humorous manner. I had expert tuition on dealing with my duck and have made some brilliant home-cured food, feeling very confident to make more!

Such an interesting day

Such an interesting day. I learned so much about charcuterie and specifically salami making. It was fun, informative and hands on with the bonus of eating some of Bray’s excellent products. Have already recommended to friends.

The meat was delicious

The meat was delicious. I had been gifted a 3 month subscription. However my first delivery was mid January but my next delivery didn’t arrive until March.

Fantastic day

Fantastic day - we did the venison course, involving butchering a whole deer, principles of curing and making our sausages.
Started the day with coffee and charcuterie, and the tastings continued. We finished up with a charcuterie lunch and wine and beer.
What’s not to like!

A fantastic selection of charcuterie. My second purchase. All very good quality and tender. It keeps for 3 months unopened. Packs of five fit through the letter box so great for sending as a gift. Helpful tasting cards included with pairing suggestions which makes for a great sharing experience. I’m very happy and will repeat buy. Very good quality at a very competitive price.

An excellent experience

Alex and the team have a well oiled (greased? sorry) process in place for their courses at Bray. I attended the sausage making one and everything was there for me; appearing at the right time, with the right information and the right equipment/ingredients.

All in all, a great learning experience not only with sausages but reviewing the salamis and chorizos as well.

Taking home my efforts, they impressed my family with their taste and my new found skill.
